surprising what kind of fudge do you make? I just made a double batch of Toll House Fudge on Sunday. It is a no brainer, but delicious fudge. I would like to experiment with it more, but my son is a purist!

I like the fluff fudge. I used to use the stovetop but the microwave is so easy. If I am really cheating I will use the sweetened condensed milk and do it that way. I don't even think you have to time it, just melt and stir. Seems like cheating. I can remember when the fudge wouldn't cook long enough and it was fudge sauce or cooked too long and it was fudge crystals. Now it's hard to make that large of an error. The microwave does seem like cheating. I worked at AAA for 10 years and there was a girl that worked there (that I love dearly) and she always cooked in the microwave. She would make bacon and egg sandwiches in the microwave and them eat them at her desk all the time. Yes, she would cook the bacon, cook the eggs and had a toaster to toast her bread. At the office. During working hours. It drove me NUTS! The office manager was (and still is) a bit of a pansy (although we are still friends and I still call her a pansy to her face) and would never say anything to her even though no one else could use the microwave because it was always greasy with bacon grease. My girlfriend always wanted the fudge recipe I had for the microwave, because sometimes she just wanted fudge. Around the holidays she would REALLY make me nuts begging for the recipe and I would never give it to her because she made me so mad cooking all the time. I told her she did not need any other excuses to make a mess in the kitchen and I wouldn't encourage her. (I am nothing if not blunt.) Sorry, that was a cute little story that turned into a book. I always think of her this time of year when I am thinking fudge. So funny. I have given her the recipe since then.

surprising, I have done the fluff recipe too, but the Toll House, while using the cooktop, is really a no brainer also. You don't have to use a candy thermometer or anything. It is always the same..........great!!! If I have extra time I think I will experiment, now that my son as the plain stuff he loves!
