I hate mushrooms. Yes, I'm pretty sure no nick could kick my ass from here to Ohio and back. I'm not going to lie to you, I'm a weakling. Hey, happy Wednesday. I work today and tomorrow then it;s off to a dental conference in Kelowna. Hope everyone has a great hump day! Hump day, hee hee, sounds dirty!

Had a lazy Wednesday rested the leg especially after yesterday taking a group of school children around the zoo and defying doctors orders in the process....

Yummy, that is a great dish. Does anyone have Best of Bridge cookbooks? They are very popular here and they have a dish called Classy Chicken, I will post the recipe, it is one of my favorites....easy, rich and yummy!!

Jessica it is too bad you don't like mushrooms, I made a wonderful risotto on Sunday, with chicken and mushrooms, but would work wonderfully with just mushrooms. Of course I have tons of risotto recipes with all kinds of ingredients, many are vegetarian.

I will post my very loosely interpreted recipe for Chicken Divan over in the recipe thread. I thought I had seen one somewhere. I love mushrooms, but Madelyn has adored them since before she had teeth. When I make chicken pot pie she likes to sit beside me because she knows I will give her all of my mushrooms. She's a little spoiled.

I'm better with mushroomsnow than I used to be. I won't go to great lengths to pick them out of anything anymore. I'll take off any obvious ones, but if it's cooked on a pizza or something, I'll just eat them I love risotto, I could probably substitute something else for the mushrooms perhaps.

I have a recipe for another risotto with autumn squash in it. I might try that one this weekend! That sounds yummy with a pork roast, of course Jessica you could skip the roast. Jessica I think that you might like the mushroom risotto, as the mushrooms are coursely chopped so there are not chunks of mushrooms! I will try to post the recipe some time when I am at home. Have you ever made risotto?

Jessica I will try to remember in the next day or so. I have not tried that one, but it is a basic recipe. The trick with risotto is cook the rice before liquids (usually with aromatics) then deglaze with dry wine (probably white with squash) then slowly adding liquid (usually HEATED stock, of your choice). Well, I'll try making it just for myself first and see how it goes before I cook it for anyone else. Sounds so yummy! I love rices and pastas, so it's right up my alley.

Jessica once you get the technique down it is a great dish to play with. You can put almost anything into it you want. It reheats beautifully also!

I got some beautiful short grain brown rice at Costco the other day. It's fabulous! I have never had the short grain brown before. Really nice.
I have never gotten into risotto but it sounds like I am missing the boat on it. I love easy and reheatable.
